British jeweller Laurence Graff bought the Delaire estate outside Stellenbosch in 2003, and has expertly combined art, design, food and wine to create a simply stunning hotel.
There are just ten guest lodges with big private pools and even bigger views of the gardens and winelands, maximised by glass fronted rooms. The lodges and main lodge are decorated with pieces from the owner's own art collection, including works by renowned local artists such as Lionel Smit and Dylan Lewis, and all of the materials have been locally sourced and the furniture custom made. The end result is a modern masterpiece which still respects the surroundings, and encapsulates the essence of South Africa.
If the immaculate accommodation wasn't enough of a lure, the restaurants and estate's own wine vintages should clinch the deal. The signature Delaire Graff Restaurant is under the watchful gaze of executive chef Christiaan Campbell and specialises in dishes using exceptional local produce, served either in the funky dining room or on the lovely terrace under pin oak trees. We particularly recommend the pickled beetroot carpaccio with goat's cheese fritters and the straight up fish and chips. The lodge's other restaurant, Indochine, offers modern Asian Fusion using produce mainly sourced from local organic farms and the on-site greenhouse.
For vinophiles, the Cape Winelands are already the stuff of legend, but Delaire is a welcome addition to the ranks of top Cape wineries. The estate vineyards produce exceptional Merlot, Chardonnay and in particularly good Cabernet Sauvignon - many an hour can be wiled away sampling vintages at the supremely comfortable Wine Lounge.
Art, food and wine are all major players in this hotel, however there are further facilities such as the spa which are not to be forgotten. All of the latest treatments are on offer, and the setting is truly spectacular. Try a hydro massage bath or soak up the scenery on a private terrace for alfresco treatments. There is also an infinity pool as well as Pilates and a gym.
