Thai Salmon Recipe

Ingredients

Light Soy sauce, Sweet chilli sauce, Sesame oil, Garlic, Coriander, Sesame seeds, 2 Salmon fillets

 

For the stir-fried veg:

1 small Pak choi, ½ pack of Mushrooms, 1 Pepper, 1 Broccoli, A few Spring onions (or any veg kicking around!)

 

For the Salmon:

Mix the soy sauce, sweet chilli and sesame oil together, adding about 1 tablespoon of each or to your own taste. Next crush the garlic and chop the coriander. (I like to keep mine chunky to really enjoy the flavour and also love the bright colours on the salmon) and add to the saucy marinade. Pour over the salmon and leave to marinate for as long as possible (at least 20 minutes). Then sprinkle over the sesame seeds and grill for 5-10 mins until cooked through and the soy sauce is starting to caramelise on top.

 

For the stir-fried veg:

While the salmon is grilling, stir-fry the (pre-chopped) veg in some oil and soy sauce until it is no longer raw - but it is nice with a bit of a crunch! If you are feeling hungry, noodles with a little sesame oil is a great addition. You (should) end up with a flavoursome and most importantly quick, mid-week supper which will impress all! Enjoy!
